Daphnis and Chloe

Saffron from Kozani
Pickup currently unavailable
Krokos Kozanis, the red saffron of Greece, has been cultivated for 400 years in a small part of the Western Macedonia region spanning more than 25 villages. Today it is produced by an agricultural cooperative of 900 families who have PDO status and make some of the most refined saffron in the world. Among the characteristics that make Greek saffron unique are its limited geographical distribution, and therefore the microclimate of the growing area, and the processing method. Greek saffron is slowly dried, not roasted. Therefore, it has a more powerful and long-lasting scent. Unlike Asian and Middle Eastern producers, who trim the yellow edges of their saffron, the Greeks keep them intact. This, together with the BOB status, is proof of quality and originality.
